January 2015 – The Clink Charity is unquestionably unique. Based in the UK, it operates fine dining restaurants that are open to the public yet located within working prisons, and manned entirely by prisoners working as chefs, waiters, receptionists and cleaners who receive accredited training in preparation for their release.

The idea behind the Clink Restaurant is straightforward; to reduce re-offending rates by providing recognised training in a true-to-life environment and assist ex-offenders to find work within the wider hospitality industry. It was the brainchild of Chef Alberto Cristi who developed the concept and, backed by the Clink Charity and Her Majesty’s Prison Service, the first restaurant opened at HMP High Down, Surrey in May 2009 with the full support of then-governor Peter Dawson. It was immediately successful in proving itself, with a dramatic fall in the re-offending rates for prisoners who had completed the training. The average re-offending rates for male prisoners in the UK in the first year after release is close to 50%, whilst the figure for those who have worked within the Clink is now less than 10%.

The second restaurant at HMP Cardiff followed in September 2012 and had near identical results. In September 2013 Ian Jones, Managing Director of Mission read that the charity would be opening a third Clink in HMP Brixton in early 2014 and contacted Christopher Moore, the Chief Executive of the charity, to offer a complete system fully installed and free of charge. Mission is one of the most highly regarded systems in the industry and Chris jumped at the opportunity gratefully. The two men met and had lunch at High Down, where it was agreed that Mission would supply systems not just for Brixton but also for High Down and Cardiff, as well as continuing the relationship into future expansion.

Ian then discussed his offer with Mission’s principal hardware suppliers, Epson and Pioneer POS. Again both companies were very keen to help and offered to provide equipment free of charge. Gee Singgih, CEO of Pioneer POS, even flew over from California to have lunch at High Down, such was his desire to support the charity.

By May 2014 all three restaurants were using Mission EPOS, managed centrally from the charity’s Head Office. Cardiff also has integrated Chip & PIN generously provided by PaymentSense. A fourth restaurant, at HMP Styal in Cheshire, has been announced and work started there in September 2014.
